Why do payment gateways disconnect or close accounts before launch?

WooCommerce payment plugins like Square randomly disconnect without warning, forcing store owners to rely on customers to notice that checkout has no payment methods. At the same time, payment processors can abruptly close accounts right before launch due to restricted business classifications, leaving founders stranded and waiting on new providers.
